Jazzing up Avocado on Toast

I love avocado. Like seriously…I LOVE it. I am ashamed to say, however, that I haven’t been very imaginative with it. I will put it on anything sure, but other than guacamole I never mixed it with anything until this morning….


I’m at that stage of moving out of the apartment where I am trying to use everything up…and have packed away the majority of my kitchen equipment but because of this I discovered something amazing.

I was making my normal avocado on toast when I realized it didn’t just have to be avocado on toast. I got out my NutriBullet and added the avocado with some chick peas and green peas and blended it with some olive oil to make a rich, creamy, slightly chunky humus and it ROCKED! I added some lemon juice and salt and pepper and it was perfect.

I put a healthy portion on two slices of toast and still have plenty left over for tomorrow! Why did it take me so long to figure that out! How do you all jazz up your avocados? I know now the possibilities are endless!
